This winery bets on making wine from monastrell grape, the traditional Ibizan variety. Owners decided to plant old ungrafted vines between 40 and 60 years old so they would absorb the essence of Pityusic land. Its age provides a concentration of flavors and aromas.
Its wines are subject to different ageings and artisanal manufacturing methods, such as hand harvesting, stalking, and plunging. However, modern technologies are also taken advantage of to control temperature and fermentation conditions.
